Sweet Potato Pudding

 

3 to 5 large yams
2 eggs
1/2 cup milk or 1/2 &1/2
2 Tb butter
2/3 cups Brown Sugar
2 packs Black Walnuts
2 cups Small Marshmallows
1 Tb Vanilla
Directions:
Clean & cut off ends of Yams. Boil till done & tender with fork. Remove peelings.
Add
Eggs, Milk, Butter and Marshmallows
Next Add:
Black Walnuts, Vanilla, Brown Sugar & Marshmallow and stir toughly.
Pour into lightly buttered casserole dish. Bake at 375 for 40 min. When almost done add marshmallow on top to Brown. When done test with fork.

Sweet Potato Salad

(Ingredients:

1. 8 medium Sweet Potatoes

2. 1 16oz fresh whole Cranberry

3. 1/2 Stalk Celery Diced

4. 1 6oz bag of chopped walnuts

5. 1. 8oz mini Marshmallows

6. 1 Half cup brown Sugar

7. 1 1/2 cubs of Butter 

Method: (24hrs) per prepared Sweet Potatoes

1. Bring Whole Sweet potatoes (add salt to the water) with skins on to a boil for 3 minutes, they should be half firm when pricked with a fork,  then let set on counter for three hrs keeping the potatoes in the water, then place in refrigerator still keeping them in the water over night

 2. Scrape off the skins with a paring knife using the back edge of knife over the water faucet.

3. Dice all potatoes to a large dice, place in bowl ready for the other Ingredients. 

 Method: Sweet Potato Salad
 Place all Ingredients in a large bowl (except the marshmallow cream)    

  1. Medium dice celery
  2. Large dice Sweet Potatoes
  3. Fresh whole Cranberries add to boiling water let sit for 2 minutes rinse over very cold water, ice if you have it then chill them so they are very cold.
  4. chopped walnuts, Half cup brown Sugar
  5. 8oz mini Marshmallows melt the Marshmallows in a sauce pan with 1 & cubs of butter, mixing on till smooth this is the last step, have ready your bowl of Sweet Potato Salad Ingredients making sure you have tossed all Ingredients lightly then add the marshmallow cream to the salad tossing lightly until the potatoes are covered evenly then place in your decorative bowl and set in refrigerator ready for your event

Variations:

1.      Add Brandy, 1 Tb Vanilla or Rum about 2oz for that extra bounce in flavor

2.      Garnish with Mint leafs for the holidays)
